Non-authentic English curry:
I use to make this when I was seven or eight.
In a medium saucepan lightly fry in a little oil or fry until starting to caramelise:
One or two diced onions.
And ‘some’ of the following if desired:
1 cup diced apples or pears.
1 cup diced dried apricots.
¾ cup diced capsicum.
¾ cup raisins.
½ cup mixed peel.
Add the the following and simmer for at least 10 minutes:
2 cups stock.
Indian or Thai curry paste, chili paste, jerk seasoning or Mexican seasoning to taste.
Add some of the following if desired:
4 tablespoons tomato paste.
2 tablespoons light soy sauce.
2 tablespoons cooking wine.
1 tablespoon minced ginger.
1 tablespoon fish sauce.
4 cloves crushed garlic.
½ to 4 teaspoons gala masala.
A few splashes liquid smoke.
Pulse in the food processor.
Reheat in the saucepan with ‘one’ of the following”
1.5 cup cream.
1 cup coconut cream.
¾ cup mango puree.
½ cup yoghurt.
Barbecue or grill four servings of beef chicken lamb or seafood.
Serve with the curry sauce
