Why am I not surprised that you have cause and effect completely backwards here? That table you posted shows how much water vapour air at a given temperature can can carry at saturation. Nothing more, nothing less. It most certainly doesn’t work in reverse.

There is no mixing ratio table for CO2 at ambient temperatures because every line would simply read infinity - 0C is 78 degrees above the sublimation point of CO2, so a 100% CO2 atmosphere at 1 bar would be perfectly stable. You’re actually knocking on the door to understanding why water is considered a feedback rather than a forcing - but I’m pretty sure you won’t step through.
